Pasta water is brilliant.
Daddy Jack was the kind of guy everyone benefited from knowing, salt of the earth kind of guy.
Looks delicious. Need to try it myself sooner rather than later, really interesting dish. Rest in peace big man, gone but not forgotten.

I only found out last night that Jack had passed, and was sad and happy to hear the eulogy video from his 2 daughters. You tend to think Legends live forever. As I sat down to a steak and stilton sandwich dinner, this video was offered to me! Thanks Jack for all the great recipes and that one is a classic. I am going to re-watch a fair few of these over the coming months. Cheers all Andrew, a bit of a chef as well. Jack always shows the restaurant way to doing things. Clean fingers, no gloves, old school 🤩

June 2024, and I only just came across this. I am so very sorry to hear of Jack's passing, and offer my condolences to the family. Greetings from Canada. I was only thinking a few weeks ago, I hadn't seen any videos for a while and a UA-cam Short has has just been offered to me today. I am a trade chef, catering college educated in England and loved Jack's style of cooking, simply explained and showing the trade way for doing things. Loved seeing back of house, the line, the Mise en Place, the cooking flats and pans. Jack made it look all so simple. Like others, I had hoped to swing by the restaurant at some time, but unfortunately Legends don't live forever. Sorry to see the merchandise shop is gone. Best wishes to you both and I hope you get much comfort from the love of others and those that loved Jack. ❤🩹

I never like or post comments, but for this man, I'll make the exception. This recipe is my go reference. Just like Jack nothing is measured. Everything is by feel. For the hatters, I'd rather eat from this man's hands then any gloved operation. One last tip, dontt skip the tarragon
